Almond Biscotti

[Recipe Description]

Ingredients:

Biscotti:

  • 1/2 cup butter, softened

  • 1 cup sugar

  • 2 eggs

  • 1/2 tsp salt

  • 1 Tbs baking powder

  • 1 tsp almond extract

  • 1 cup whole raw almonds

  • 3 cups flour

    Topping:

  • 1 egg white

  • 4 Tbs sugar

  • Optional, sliced raw almonds

Directions:

  1. In a large bowl or stand mixer, cream together the butter, sugar, eggs, salt, baking powder, and almond extract.

  2. Add whole raw almonds and mix.

  3. Gradually add flour. Note: the dough will be crumbly, but will come together when shaped.

  4. Form 4 logs, approximately 4”x6” or 4”x8” in size, and place them on a parchment line half sheet baking pan. The logs will grow a little during the first bake.

  5. Prepare the cookie topping. In a small bowl, mix egg white with 1 Tbs sugar at a time until mixture is paste-like (approximately 4 Tbs sugar total).

  6. Brush top of logs with egg white sugar mixture.

  7. Optional, sprinkle sliced almonds on top of logs and brush again with egg sugar mixture.

  8. Bake at 350 degrees for 25-30 min, until lightly brown.

  9. Cool and slice logs diagonally.

  10. Lay cookies cut side up and rebake at 225 degrees for 1-2 hours.

  11. Turn off oven, and leave in closed oven overnight.

Chinese Chicken Salad

Ingredients

Dressing Ingredients

  • 8 Tablespoons sugar

  • 8 Tablespoons apple cider vinegar

  • 7 Tablespoons vegetable oil

  • 1 Tablespoon sesame oil

  • 2 teaspoons salt

  • 1/4 teaspoon corse ground pepper

  • 1/8 teaspoon Chinese 5 spice

Salad Ingredients

  • Roast chicken, shredded

  • Lettuce, chopped

  • Green onion, chopped

  • Wonton chips

  • Char siu, chopped

  • OPTIONAL Chinese parsley, garnish

Directions

  1. Combine dressing ingredient. Chill before use

  2. Layer salad ingredients. Lettuce, chicken, char siu, wonton chips, green onion, parsley

Somen Salad

Ingredients

  • 1/4 cup sugar

  • 2 teaspoons salt

  • 1/2 cup vegetable or sesame oil

  • 6 Tablespoons white vinegar

  • 2 Tablespoons shoyu

  • Sesame seeds, toasted

  • Somen noodles

  • Iceberg lettuce, thinly sliced

  • Char siu, thinly sliced

  • Scrambled egg, flat and sliced

  • Kamaboko, sliced

  • Green onion

  • English cucumber, julienne

  • OPTIONAL Carrots, shredded

Directions

  1. Cook and drain somen noodles.

  2. In serving pan, roll noodles into single servings.

  3. Layer lettuce, char six, kamaboko, and egg.

  4. Garnish with green onions.

  5. Add cucumbers when serving.

Notes:

For 9” x 13” pan, make 2-3 times dressing and 2 somen noodle packages

Coffee Gelatin Dessert

Yields

10-11 cups

Ingredients

4 1/2 cups milk

4 1/2 packets plain Knox Gelatin

3 egg yolks

1 cup sugar

3 Tablespoons instant coffee crystals

1 8oz. Cool Whip

Directions

Heat milk, sugar, gelatin, and egg yolks in pot over medium heat.

Stir until just boiling.

Remove from heat and add instant coffee crystals.

Cool, then fold in the Cool Whip until fully incorporated.

Pour into individual 5 or 5.5oz. Cups.

Refrigerate overnight.
