Ingredients:
Biscotti:
1/2 cup butter, softened
1 cup sugar
2 eggs
1/2 tsp salt
1 Tbs baking powder
1 tsp almond extract
1 cup whole raw almonds
3 cups flour
Topping:
1 egg white
4 Tbs sugar
Optional, sliced raw almonds
Directions:
In a large bowl or stand mixer, cream together the butter, sugar, eggs, salt, baking powder, and almond extract.
Add whole raw almonds and mix.
Gradually add flour. Note: the dough will be crumbly, but will come together when shaped.
Form 4 logs, approximately 4”x6” or 4”x8” in size, and place them on a parchment line half sheet baking pan. The logs will grow a little during the first bake.
Prepare the cookie topping. In a small bowl, mix egg white with 1 Tbs sugar at a time until mixture is paste-like (approximately 4 Tbs sugar total).
Brush top of logs with egg white sugar mixture.
Optional, sprinkle sliced almonds on top of logs and brush again with egg sugar mixture.
Bake at 350 degrees for 25-30 min, until lightly brown.
Cool and slice logs diagonally.
Lay cookies cut side up and rebake at 225 degrees for 1-2 hours.
Turn off oven, and leave in closed oven overnight.
